Soluble in alcohol (ethyl/perfumers sb40b/isopropyl/etc), not water soluble, poor solubility in oil.

Q: At what temperature does this melt? I live in the desert. Need accurate answer, thanks

typically, Chios Mastic melts at about 200F, not less than 190F, so you'll be fine.

Q: can this be used to make turkish ice cream?

I'm not sure about making ice cream, but I can tell you that chewing this gum is like literally chewing on Hard Rocks. You cannot chew this gum, it is much too hard and tough.
