Pillsbury Funfetti Gluten Free Premium Cake & Cupcake Mix with Candy Bits

This is stupid expensive for a cake mix, but it did the trick. I wanted to make fancy funfetti, so this is what I did last time:Replaced liquid with buttermilkReplaced eggs with egg whitesAdded lemon zest from two lemonsReplaced oil with butterAdded a teaspoon of vanilla extractAdded 1/2 teaspoon of lemon extractSplit layers between three pans instead of twoFrosting:8 ounce package cream cheese, softened1/2 stick butter, softened1 lb. confectioners sugar1 teaspoons vanilla extractjuice half a lemonrainbow chip icing**Using a mixer, blend the butter and cream cheese together until well combined. Gradually add in the confectioners sugar until fully incorporated. Mix in vanilla and lemon juice. Mix with rainbow chip icing.

I wasn't even a huge fan of funfetti cake before my celiac diagnosis, but I saw this and had to try it: and WOW! Definitely the best gluten-free cake I've ever had, and I'm a tough cake critic and lover. I frosted it with a plain vanilla and it was heavenly.

Delicious. Light. Fluffy, Not too sweet. Nice vanilla flavor. Not heavy or thick like many gluten free mixes. It's a really good product!! I recommend it, especially for kid's birthdays. You cannot tell that it is gluten free.

I had great fun making this with my grandson. So good and yummy said my grandson!

Note: This review is based on the cake mix that I purchased at a grocery store, I haven't ordered it from this vendor. The price in the store is much more reasonable. I've tried almost all of the store brands of gluten free cake mix, and most are just dry and awful. I really wasn't keen on having the "funfetti" in my cake, I didn't need extra sugar or candy bits in my cake but the reviews for this mix were good so I decided to give it a try. This is definitely the best gluten free cake mix I've had yet, the biggest selling point being that it is MOIST has good vanilla flavor and is actually not very sweet, which is nice given that almost all prepared frostings are quite sugary. The funfetti part is pretty, and really doesn't add anything noticeable to the cake that alters it's basic vanilla cake flavor, so don't worry about that. This is a great, lower priced (many gluten free products are very expensive) cake mix that only requires eggs (with an option to only use egg whites too) and a small amount of oil, and I see it at nearly every grocery store I go to. Cost and convenience AND the best taste will make this my go to gluten free cake mix when birthdays roll around.
